  • For the Marinade
    1. 1.5 cups Greek yogurt
    2. 2 tablespoons Kashmiri red chili powder
    3. 1.5 tablespoons Turmeric powder
    4. 2 tablespoons Garam masala
    5. 2.5 tablespoons Coriander powder
    6. 2 tablespoons Cumin powder
    7. Salt, to taste
    8. 2 tablespoons Kasuri methi (dried fenugreek leaves)
    9. 3 tablespoons Chickpea flour (besan)
    10. 3 tablespoons Ginger-garlic paste
    11. 1/2 cup Mustard oil (heated)
  • For the Tikka
    1. 450 grams Paneer, cut into thick cubes
    2. 3 Bell peppers, cut into large chunks
    3. 1 medium Yellow onion, cut into large chunks
    4. 1 medium Red onion, cut into large chunks
Steps

Prepare the Marinade

  1. Heat the mustard oil until hot and allow it to cool slightly.
  2. In a large mixing bowl, combine the Greek yogurt, Kashmiri red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, salt, kasuri methi, chickpea flour, ginger-garlic paste, and heated mustard oil.
  3. Mix thoroughly until a smooth and thick marinade is formed.

Marinate the Paneer and Vegetables

  1. Add the paneer cubes, bell peppers, and onion chunks to the marinade.
  2. Gently toss until all the pieces are evenly coated.
  3. Cover and refrigerate for at least 30 minutes. For best flavour, marinate for 2 to 4 hours.

Assemble and Bake

  1. Preheat the oven to 475°F (245°C).
  2. Thread the marinated paneer, bell peppers, and onions onto skewers, alternating the ingredients.
  3. Arrange the skewers on a wire rack placed over a baking tray.
  4. Bake for about 10 minutes or until the vegetables are lightly charred and the paneer develops golden edges.
  5. Halfway through cooking, lightly brush or spray the tikka with oil if desired.
  6. For additional smoky flavour, broil for 1 to 2 minutes before serving.

Serving

  1. Serve hot with green chutney, lemon wedges, and naan, roti, or pita bread.
