  • Preparation
    1. 1 cup Soya chunks
    2. Water to boil
    3. Cold water
  • Cooking
    1. 2 tablespoons Oil
    2. 1 teaspoons Cumin seeds
    3. 4 cloves Garlic (crushed)
    4. 1 inch Ginger (crushed)
    5. 1 Onion (finely chopped)
    6. 1 Bell pepper / Capsicum (finely chopped)
    7. 2 Tomatoes (finely chopped)
    8. 1 teaspoons Kashmiri red chili powder / paprika powder
    9. 1/2 teaspoons Cumin powder
    10. 1/2 teaspoons Coriander powder
    11. 1/2 teaspoons Dry mango powder
    12. 2/3 teaspoons Salt (or to taste)
    13. 1 tablespoons Lemon juice
    14. 2 tablespoons Fresh coriander leaves (finely chopped)
Steps

Preparation

  1. Wash, peel, and cut the vegetables as instructed, and keep aside.
  2. Boil water in a saucepan until it reaches a rolling boil.
  3. Add soya chunks and boil for 7 minutes.
  4. Drain them and place in a bowl of cold water for 5 minutes to stop the cooking process.
  5. Squeeze out excess water from the soya chunks and keep aside.

Cooking

  1. Heat oil in a wok or pan over medium flame.
  2. Add cumin seeds, crushed garlic, and crushed ginger. Saute for a minute until fragrant, but not burnt.
  3. Add chopped onion and bell pepper/capsicum. Saute for two minutes.
  4. Add chopped tomatoes and cook until soft.
  5. Add turmeric, chili powder, cumin powder, coriander powder, and dry mango powder.
  6. Saute well until the oil starts to separate from the masala.
  7. Add the soya chunks, lemon juice, and salt. Toss well on medium heat for five minutes.
  8. Garnish with chopped fresh coriander leaves. Serve warm.
